Recipes/Desserts/Candied "Glazed" Pecans
Ingredients
- 320g sugar
- 90g water
- 20g margarine
- 1.5 tbsp molasses
- 1.5 tsp cinnamon
- 1 tsp cardamom
- 1.5 tsp allspice
- 1/4 tsp cloves
- 1 tsp vanilla extract (not clear it has much effect)
- 500g pecan halves
Equipment
- Large saucepan or dutch oven
- Spoon
- 2 cookie sheets lined with parchment
Method
- Preheat oven to 350F
- Combine all but pecans in a saucepan
- Bring to boil over medium-low heat
- Stir in pecans
- Cook until essentially all syrup is sticking to nuts
- Spread nuts on parchment-covered cookie sheets
- Bake about 10 minutes
Notes
This version is relatively lightly spiced
Some recipes use egg whites and even champagne. Some recipes bake the pecans without the stewing step. Some recipes just cook the whole schmeer in a saucepan.
